Ingredients:

- 3/4 cup unsweetened applesauce
- 1/4 cup honey
- 3/4 cup plain or vanilla Greek yogurt
- 2 teaspoons vanilla extract
- 2 large egg whites
Dry
- 1/2 cup mini chocolate chips
- 1/2 cup granulated sugar
- 1 cup whole wheat flour
- 1/2 cup unsweetened cocoa powder
- 1/2 teaspoon salt
- 1 teaspoon baking soda
- 1 teaspoon baking powder
Instructions
- Preheat the oven to 425 degrees.
- Line or grease several muffin pans. (I would grease for best results)
- In one bowl combine the wet ingredients and in another combine the dry ingredients.
- Stir the wet ingredients into the dry ingredients slowly.
- Fill muffin compartments to about 4/5 full. (Yes, more full than traditional muffins)
- Bake for 4 minutes at 425 then reduce temperature to 375 and bake for about 12 minutes. Depending on air moisture, your ovens, and elevation, the time could vary by about 3 minutes. Monitor them closely. Insert a butter knife or a toothpick to ensure that they are fully baked; if the utensil is clean after it is removed, then the muffins are finished.
